Lemon-Dijon Quinoa Veggie Salad

Lemon-Dijon Quinoa Veggie Salad 

  • 2/3 cup water and 1/3 cup quinoa (follow instructions on package to cook quinoa)
  • 3 cups corn
  • 1 can low sodium black beans
  • 1 cup edamame shelled
  • 1 chopped pepper (I used red)
  • ½ cup cilantro
  • 6 green onions chopped
  • 1 tablespoon garlic powder

 

Dressing:

  • 6 tablespoons lemon juice ( I used fresh squeezed lemon)
  • ¼ cup reduced sodium soy sauce ( I used Worcestershire sauce and it was still good)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
