Lemon-Dijon Quinoa Veggie Salad
- 2/3 cup water and 1/3 cup quinoa (follow instructions on package to cook quinoa)
- 3 cups corn
- 1 can low sodium black beans
- 1 cup edamame shelled
- 1 chopped pepper (I used red)
- ½ cup cilantro
- 6 green onions chopped
- 1 tablespoon garlic powder
Dressing:
- 6 tablespoons lemon juice ( I used fresh squeezed lemon)
- ¼ cup reduced sodium soy sauce ( I used Worcestershire sauce and it was still good)
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
