I'm proud and happy to report I got my husband in to meal prepping!

When Paul and I got married, he quickly learned that I meal prep every Sunday night. Sometimes I love it! I have a glass of wine, I bust out some Beyoncé and go to town on three large, nutritious meals for the week. Other times, I hate it! I'm tired, I have to prepare work for the week and all I want to do is be a couch potato. However, I've learned that real change occurs when you make the decision to stick to your promise to yourself whether YOU FEEL LIKE IT OR NOT. Don't let your emotions run your life friends. This picture -right here- is what swimsuit season looks like. It's day in and day out sacrifice, time, patients and determination to stick to your plan. And now I got my husband on board! Healthy Stuffed Peppers Recipe - Meal Prepping

RECIPE:

  • 8 GREEN PEPPERS
  • QUINOA
  • CORN
  • BLACK BEANS
  • ONE RED PEPPER
  • MOZZARELLA CHEESE

Directions:

  1. COOK QUINOA ACCORDING TO PACKAGE
  2. DRAIN AND HEAT CORN AND BLACK BEANS AND PLACE IN MICROWAVE FOR 2-3 MINUTES
  3. DICE RED PEPPERS FINELY
  4. CUT OUT CENTER OF GREEN PEPPERS AND STUFF ALL INGREDIENTS INTO PEPPERS 
  5. PLACE ON BAKING SHEET, TOP WITH CHEESE AND BAKE AT 375 FOR 25 MINUTES
