GLUTEN FREE TUNA PASTA SALAD and BANANA SPLIT PROTEIN BALLS

Two of my FAVORITE meal-prep RECIPES:

1) GLUTEN FREE TUNA PASTA SALAD

  • 1 BOX GLUTEN FREE PASTA
  • 2 LARGE CANS OF TUNA
  • ½-3/4 CUP PLAIN GREEK YOGURT
  • ½ CUP ORGANIC MAYO
  • 4-6 STALKS OF ORGANIC CELERY
  • ½ CUP OF CRAISENS (OR DRIED CHERRIES)
  • ½ CUP SHAVED ALMONDS 
  • ¼ CUP GRATED PARMESAN CHEESE
  • 1 CUP SHREDDED KALE
  1. COOK PASTA ACCORDING TO BOX. DRAIN WATER AND LET COOL
  2. MIX ALL INGREDIENTS TOGETHER IN A LARGE BOWL
  3. YOUR PREP IS READY

2) BANANA SPLIT PROTEIN BALLS

  • 1.5 CUP OLD FASHIONED OATMEAL
  • 1 SCOOP ORGANIC PROTEIN POWDER
  • 1 TBSP CHIA SEEDS
  • ¼ CUP SUNFLOWER SEEDS
  • ¼-1/2 CUP SHAVED ALMONDS
  • DRIED CHERRIES
  • 2 TBSP. ORGANIC HONEY
  • ½ ORGANIC BANANA (FROZEN THEN DEFROSTED)
  • 5 MEDIUM SIZED STRAWBERRIES
  1. GRIND OATMEAL, CHERRIES, SUNFLOWER SEEDS AND SHAVED ALMONDS UNTIL CLOSE TO A POWDER FORM. 
  2. REMOVE FROM BLENDER OR FOOD PROCESSOR AND PUT INTO A BOWL.
  3. DEFROST BANANA FOR 30-40 SECS IN A MICROWAVE AND ADD TO BLENDER WITH SLICED STRAWBERRIES. WHIP AND ADD TO BOWL.
  4. COMBINE REMAINING INGRIDIENTS INTO BOWL.
  5. USE SPOON TO MASH EVERYTHING TOGETHER AND USE THE HONEY AS ONE OF YOUR MAIN BINDING COMPONENTS. 
  6. ROLL INTO BALLS AND WALLA! YOUR PREP IS READY.

SIDE NOTE: I ALSO PUT A LITTLE EXTRA PROTEIN POWDER ON A PLATE AND ROLLED THE BALLS OVER THE POWDER IF THEY WERE TOO GOOEY.
