Chicken Parmesan  

6 oz. boneless skinless chicken breasts

1 tbsp. fresh basil

1/2 tsp. garlic powder

1 1/4 lb. zucchini

1 large cage-free egg

2/3 cup organic marinara sauce

2 tbsp. olive oil

3/4 cup gluten free bread crumbs

2/3 cup shredded mozzarella cheese

Preheat oven to 450 and spray pan.

Mix bread crumbs, a little extra cheese, egg, olive oil and garlic powder together in bowl.

Add in chicken and coat each breast.

Place chicken on baking sheet and bake for 15 minutes.

Remove chicken and add in sliced zucchini and top zucchini with olive oil, salt and pepper.

Flip chicken and bake for additional 10 minutes.

Remove chicken and add sauce and cheese.

Broil for 2 minutes then remove and add basil (optional).
